Our Favorite Gumbo Recipe: Gulf Coast Gumbo
We found this recipe on allrecipes.com, and had to share it with you. Here’s how we followed their recipe to feed 20 guests:
- 4 pounds medium shrimp – peeled and deveined
- 1/2 cup corn oil
- 1/2 cup all-purpose flour
- 1 cup chicken broth
- 1 (3 pound) whole chicken
- 2 onions, chopped
- 5 stalks celery, chopped
- 1 green bell pepper, chopped
- 5 large tomatoes, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tablespoon salt
- 2 tablespoons Old Bay Seasoning TM
- 1 tablespoon ground cayenne pepper
- 3 (6 ounce) cans crab meat, drained
- 1 pound andouille sausage, diced
- 2 tablespoons file powder
Directions
- Peel and devein the shrimp. Refrigerate shrimp meat. Place the shrimp heads and shells in a large pot, and cover with 2 quarts of water. Cover, and simmer over medium low heat until liquid is reduced by half. Strain out the shrimp heads and shells.
- Select a large stock pot capable of holding all the ingredients. Add oil to the pot, and heat over medium high heat. Using a long handled spoon, stir in flour; cook and stir for several minutes until dark brown. At that point, the flour suddenly puffs and absorbs the oil. Slowly stir in chicken broth and an equal amount of water. Place chicken in the pot. Add onions, celery, bell pepper, tomatoes, garlic, bay leaves, red pepper flakes, Old Bay seasoning, and salt. Boil for about 1 1/2 hours, or until chicken meat is no longer pink and the juices run clear.
- Remove chicken from the pot, and set aside until cool enough to handle. Remove bones, and chop the chicken into about one inch pieces.
- Add chicken meat, shrimp broth, crab meat, sausage, and shrimp to . Add the file powder, and stir from the bottom of the pot. When the gumbo comes to a boil, remove from heat. Continue to stir from the bottom for 1 minute
. Serve.
Masks & Beads: You’ll be needing some masquerade masks & beads to go with the theme of your party; and most Michaels, Ben Franklins, and Walmarts have them if you are looking for something last minute! Or you can make a feathered mask yourself by buying a plain plastic or paper mask from a craft store, and then gluing purple/green/yellow feathers, sequins, and jewels to it!
You don’t hear of too many people actually having “President’s Day” parties, or celebrating the day other than having a day off from work or school. However, if you want to do something fun and crafty to create “President’s Day Awareness” (for your kids perhaps), then you’ll definitely want to check out some of these unique and easy to make craft ideas. Also, in lieu of the winter being so long, having a cabin fever or colonial theme party would be just as fun for those who are more into entertaining than crafts.
George Washington Powdered Wig

Making a powdered wig out of cotton balls and other house hold items is a great way to teach your kids or students about how previous presidents lived in the past. After digging around to see what we could find for this project, we really liked Kaboose’s idea the most for this. Here’s how you make a George Washington powdered wig:
Materials:
1/2 Bag of Cottonballs
1 Paper Painter’s Hat
White Glue
4″ x 2″ Black Felt
Scissors
How To Make It:
Stuff the painter’s hat full of paper towels, to make it easier to work with. Then, glue the cotton balls onto the entire hat, starting in the front, and working your way to the back. Cut your felt into 4 long strips, and glue 2 of them to the center of the bill of the hat (over the cotton balls), in an upside down “V” shape. This will be the tail of the bow. Fold the other two strips in half and glue the ends together to form the bow ties. Glue the bow over the tail and allow to dry completely. Wear the hat with the tail in the back. Thank you Kaboose!
President’s Day Weekend Colonial Theme Party

We suggest you try to make chocolate covered strawberries as Valentine’s! What you make to go with it is up to you, but here is our favorite chocolate covered strawberry recipe to melt your lover’s heart.
Ingredients
6 ounces semisweet chocolate, chopped
3 ounces white chocolate, chopped
1 pound strawberries with stems (about 20), washed and dried very well
Directions
Put the semisweet and white chocolates into 2 separate heatproof medium bowls. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowls of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)
Once the chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Set strawberries on the parchment paper. Repeat with the rest of the strawberries. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries.
Set the strawberries aside until the chocolate sets, about 30 minutes.

A BBQ can be a great way to gather friends together and enjoy the gorgeous weather while it lasts. If you do not have a BBQ yourself, ask a neighbor or a friend if you can borrow their portable grill or plan it at a friend’s house that already has the grill.
Make it a potluck affair. Everyone bring a little something to share with your friends to add a little variety to the event. From drinks to dishes there is always something to bring to a potluck BBQ. You don’t necessarily have to keep to the norm. Try an ethnic dish with flavor and flair! This is a fun way to try new things and be a little bit of an adventurous eater. When bringing an unusual dish it is important to not try something too spicy or have a mild version of the same thing.

As a caterer you can strive to work smaller events along with your larger gigs like weddings. Try to advertise for less formal events as well. A major issue with throwing a party at your house is the set up and clean up necessary. If you can provide the service not only to cater for a small function but also to provide the pre and post party needs you can hit an entirely different clientele. It is difficult to get into the smaller party scene but once you get in and have a quality review and experience the word will quickly get out.
Also, photographers can branch out into smaller events such as birthday parties and Anniversary events. These events are filled with memories and it is important to have quality photographs to remember all of these special moments. Having family and friends take photos throughout the night does not necessarily cut it. Photos are easily lost or never distributed among the party guests and hosts. Try to alter fees by not printing the photos and only sending them through a disk. This way the client can receive the photos at a reasonable price while you are not losing profit.
